so this morning I wanted to try the low carb version of this amazing tomato pie.  Came out great.

Cauliflower Crust

1 head cauliflower (crumble in food processor or buy already crumbled)

steam/salt lightly

drain.....mix with 2 eggs and 1/4 c shredded cheese of your choice. 

Pat in pie plate or tart pan bake for 20 minuites on 375

Proceed to layer and fill the same as my original recipe below.

I did cut the fat by using only 2 TBLS of rondele

mayonaise mixture, I just used 2 TBLS with some dill and 1 tsp of vinegar.

Make two layers bottom, rondele, tomatoes, sprinkle of parm, mayo spread and another layer of tomatoes top with 2 slices of provolone cut in 1/4's  Bake again for 30 min. 375

Tomato Pie

I have had several of my friends ask me for my tomato pie recipe, here it is, I hope you enjoy it.

1 unbaked  pie crust

Mix together the last 5 ingred. set aside

2 -3 lbs. of tomatoes  ( I like variety...I use my garden as well as cherry tomatoes, heirloom, roma and vine.  sliced

1/2 container of rondele cheese spread, with garlic and herbs

2 cups shredded cheddar

1/2 cup grated parmesan

1/2 cup mayonaise

1 scallion sliced

1 Tbls of fresh thyme or dill, chopped

1 Tbls of cider vinegar

salt and pepper to taste.

Directions:

Slice tomatoes (i put on a paper towel to dry them out a bit) set aside

Spread bottom of pie crust with rondele. Start layering half the tomatoes, mayonaise mixture, and cheddar cheese.  Sprinkle with half the parmesan.  Repeat layers ending with the cheeses. Bake for 40 minutes on 425 degrees.

Tip...you can salt the tomatoes or bake them in the oven on 200 for 30 minutes to get a more carmelized flavor.  I do not do this but it would be good.

I had to post this tomato pie! It is truly one of my most favorite summertime recipes. Several of my friends have asked for this recipe so I am posting it

Tomatoe time canned fresh tomatoes today

II love to plant my garden in the spring and watch the beautiful vegetables grow.  To pick and cook with the "the fruits of your labor" ...is so beautiful.  The flavors come with very little effort.  

 

Had A  lovely day in Monterey today . Look at the beautiful artichokes we will enjoy tomorrow.
